Date Squares with a Hint of Orange (Refined Sugar Free)

I asked my oldest what she wanted to make as a treat to bring to Opa and Oma's house.  Her pick was date squares, a big family favourite by us and our extended family.   You could omit the essential oil and use zest instead.  We don't prefer our date squares very sweet as we find dates sweet enough but feel free to adjust stevia and agave if desired.

Ingredients
  • 2 1/2 cups dates
  • 1/3 cup water
  • 1-3 drop orange essential oil (depending on desired taste)
  • 5-7 drops liquid stevia (optional)
  • 2 cups gluten free quick oats
  • 1/3 cup tapioca or arrowroot starch
  • 1/3 cup sorghum flour or buckwheat flour
  • 1 1/2 tablespoons psyllium husk
  • 2 tablespoons ground flax seeds soaked in 1/4 cup water for 1 minute
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 1/2 cup plus 2 tablespoons coconut oil, ghee or grass fed butter
  • 1/3 cup agave, honey, maple syrup or palm sugar

Directions
  1. In a small sauce pan heat dates and water and simmer for 2 minutes.  Puree until smooth and add in orange essential oil and stevia.
  2. Preheat oven to 350 F and grease a 9 x 9 baking dish.
  3. Combine oats,starch, sorghum, psyllium husk, flax, salt and baking soda into a mixing bowl.  
  4. Add oil and agave and stir to fully combine.
  5. Take half of the dough and press into prepared dish,
  6. Spread date mixture over top of dough.
  7. Add remaining dough on top of dates pressing lightly but ensure you don't mix the date layer into the top layer.
  8. Bake in prepared oven for 25 minutes or until golden brown on top.
  9. Cool on wire rack and cut into squares.

LARABAR GIVEAWAY | Eat Healthy & Get Outside

As we draw closer to the end of the year and towards the holidays and cold weather where we just want to bundle up and stay inside, I'm reminded that I don't want to slack off now and lose the fitness level that I worked so hard to achieve earlier this year.  It's so hard to get in shape, but so easy to get out of shape! I'm definitely going to enjoy myself and won't be sticking to a rigid routine these next couple months, but I plan to continue to exercise and eat healthy because I want to take care of myself and feel good.  As part of my daily meals, I typically eat a LÄRABAR each afternoon as that's about the time I'm hungry and heading out the door to get my son from school.  I'm never without them, because my son likes them too (as picky as he is), so there is always a LÄRABAR in my purse, gym bag, or car.  Do you do that too?  If you've ever been out and about, starving and grouchy, with equally grouchy and starving kids, you probably do.

Slow Cooker Chicken Tacos

Happy Friday friends!  My friend Leanne (And Away We Go) sent me a slow cooker recipe for chicken tacos (one of my faves!) that I had to share with you! Don't you just love a slow cooker/crock pot meal?  Nothing better than getting dinner going at the beginning of the day and then not having to worry about it again!  I think this will be on our menu this weekend!

Now that the days are cooler and our routine is busier, I have pulled out the old slow cooker and started to add a few soups and casseroles to our weekly menu. These slow cooker chicken tacos have been an old stand by in our house for a few years and I was excited to make them again the other night!

The recipe is just what I think every slow cooker recipe should be; toss the ingredients in the pot and turn it on! The mixture of chicken, beans and corn makes for a filling meal, packed with protein.

I've made this dish for guests and taken it to parties and have always had lots of requests for the recipe...

So here it is!

Slow Cooker Chicken Tacos

1 can of black beans (drained and rinsed)
1 large jar of chunky salsa
2 large chicken breasts (bone and skin removed)
2-3 Tbsp taco seasoning 
1 cup frozen corn

Add black beans and salsa to slow cooker. Place the chicken breasts on top of the mixture and sprinkle with taco seasoning. 

Cook on low for 8 hours or high for 5 hours.  

Remove chicken breasts and shred with a fork. Return shredded chicken to the slow cooker, add frozen corn and mix together with black beans and sauce. Turn the slow cooker to low and cook for a half an hour. 

Serve with soft tortillas and top with shredded cheese, sour cream and guacamole.

WORRY LESS AND SWEAT MORE

Sometimes we can get caught up in worrying about so much in this life, and even things that may never happen.  Worry is definitely a thief of our happiness and will dictate our attitude for the day.  It can become a chronic way of thinking and existing, and not only zaps our energy, but can be exhausting for those around us.  Whenever I feel a worry, I stop and think about the cause and ask myself if it is warranted.  Sometimes worry just does not make sense, and the root cause many times is fear or insecurity about something.  The “What If” this or that kind of worry when nothing definite has even revealed itself.  I found one of the best ways to beat up that kind of mentality is to sweat more.  I get my butt going and use that energy on a high energy workout like HIIT (high intensity interval training) or weight training.



Studies have shown that consistent exercise reduces stress and guess what, that includes the stress that comes from worry.  I use my workout sessions as “cheap man’s” therapy and also as my time to talk with God about what the heck is going on that is making me feel worrisome or anxious.  The more I work and sweat it through, the better I feel.  Most of the time I feel relief, calm, and energized all at the same time after a therapy sweat session.  I do not want to waste my time and energy dragging down my mental game and overall attitude on unnecessary worry.  Not only am I moving my body in a challenging way, but also relieving my mind of the clutter that is taking up precious space. 


The”worry less and sweat more” philosophy provides a healthier lifestyle and the ability to cope with the day to day obligations and responsibilities in life. I feel like I am missing out on something very important for me if I do not sweat it out. My day just feels off, not as accomplished and even tension filled because I did not get that bottled energy out. I like to face head on in the gym any feelings that are questionable as worry and I am not one to just ignore me and think everything is going to fix itself.  I am a doer and a sweater to help maintain a positive outlook, reduce stress and eliminate unnecessary worry.  I am all about not sweating the small stuff but using sweating more to worry less.

Cabbage, Beef and Tomato Stew (Gluten and MSG Free)

There is nothing like a stew on a cold day.  This cabbage stew is definitely a comfort food for me.  It is very easy to make and tastes great as leftovers as well.  I prefer to use my own stock/broth as I am sure it is MSG free, but there may be a few other brands out there. We like it with okra, but you could add in peppers, potatoes or many other favourite vegetables. Cabbage and tomatoes are in abundance right now making this a great fall recipe.
I hope you enjoy this as much as we do!

Ingredients

  • 1/2 tablespoon olive oil
  • 1 pound stewing or ground beef
  • 1 diced onion
  • 2 cloves minced garlic
  • 2 cups diced tomatoes (or 1 cup diced with 1 cup tomato puree)
  • 1/2 large diced cabbage 
  • 4 cups homemade or MSG free broth
  • 3 diced carrots
  • 3 stalks diced celery
  • 1 cup diced okra (optional)
  • sea salt and pepper to taste
  • handful fresh parsley


Directions
  1. In a large pot or dutch oven heat oil and fry onions for 3 minutes.
  2. Add garlic and beef and cook until beef is brown.
  3. Add all remaining ingredients (except parsley.)
  4. Bring to boil then turn to low and simmer 45 minutes.
  5. Add parsley and cook another 5 minutes.
  6. Serve.


Clear Skin & Non-Oily Hair

During high school, my skin (especially on my cheeks) would break out pretty bad.   I heaped on the makeup to try to hide it, which I'm sure only exacerbated the situation.  My skin was never "perfect", but later, when I got on the birth control pill, my skin cleared right up.  I also noticed that it kept my hair from getting oily.  I got off the pill awhile ago and ever since, I've noticed my hair getting greasy and my skin not looking as clear.  My forehead and the area around my jawline was full of little bumps under the skin. After about two months, I ended up going to my dermatologist and he prescribed Acanya, which is a combination of Benzoyl Peroxide (2.5%) and Cindamycin Phosphate (1%), and also told me to use Witch Hazel as a toner after washing with Cetaphil cleanser (which I've been using since high school).

So far, so good.  My skin is looking much clearer.  I wish I had visited my dermatologist when I was pregnant with my son- my back/shoulders broke out terribly in big, ugly blistery pimples.  We don't have to suffer!  Benzoyl Peroxide is available over the counter without a prescription, but I would recommend finding a good dermatologist in your area.  It's amazing how bad skin can affect your self-esteem.  Even though my break-outs weren't terrible recently, I was still self-conscious about it.


For my hair, my dermatologist gave me samples of this DHS Clear Shampoo, but he was out of the conditioner.  The shampoo has no scent, but lathers well and seems to be working.  I couldn't find this brand at my drug store, so I just ordered the shampoo and conditioneron Amazon (it's available on Prime).  I was also advised to let my hair get oily so that my hormones can balance out my oil production.  Oh man, is this hard to do?!  But, I found a cornstarch/baby powder combination at my grocery store that I love to use between washings if my hair is oily.  It's better than straight-up baby powder because it's not as strong-smelling.  It actually feels really cool and nice on your scalp when you put it in and just a little goes a long way!


But, before I headed to the doctor, I started researching online what I could do at home to help the acne situation.  I came across the Alkaline diet, which is supposed to help balance your hormones my keeping your body's blood pH level slightly alkaline at 7.35-7.45.  Below 7 is said to be acidic and above 7 is alkaline.  I'm new to this info, but here are two charts that explain which foods are on the acid-forming side, and which are more alkaline.

ALKALINE DIET




NO SUGAR.  That's what I'm working on eliminating.  

HEALTHY FATS- I'm adding back in healthy fats like a few crushed almonds and slices of avocado on my salad, cooking my protein pancake in a teaspoon of coconut oil instead of cooking spray.  

FRUITS/VEGETABLES- eat to your heart's content.  I realize I hardly eat any food- instead always serving them to my son.  I need to partake in this goodness! 

WATER- Spring, river, or tap water is completely neutral.  I'm doing good on my water intake.  Keeping my insulated water bottle nearby helps. 

The biggest no-no's on the Alkaline diet are coffee, alcohol, processed foods, sugar, salt, and red meat.  Coffee is the hardest for me to give up, I drink two cups most days.

WHEN IT COMES TO SEX AND MENOPAUSE, USE IT OR LOSE IT

Let me clarify before I continue writing this article that my stance about sex is that it belongs and is a big part of a healthy marriage. The issue with sex and menopause, or even going through the premenopausal period brings lots of changes to the female body that can negatively impact our sex lives. I do cover all things health related and never to offend, but hopefully to motivate, inspire, educate, or get us thinking about our lives in a healthier way.  I have joined the ranks of the 50+ woman and feel that it is important to speak out about subjects that we all want to talk about, but seem to hide behind closed doors feeling ashamed, embarrassed, or in denial.  Whatever the case may be, please know that no woman will escape going through menopause, we all have this in common, and it is pretty awesome to think that there is a support system to lean on for answers.



I am just going to blurt it out, when it comes to sex and menopause, use it or lose it ladies.  As our hormones plummet to nothing, ugly things start to happen to the vaginal and surrounding tissue of the urethra.  Our once plumped up beautiful flower has started to wither away making pollination something of a challenge to say the least. What is happening is called vaginal atrophy and just as a muscle begins to decrease in size and shape when not exercised, the same thing happens to our vagina. Studies have shown that consistent sexual activity helps to promote lubrication of the vaginal walls and to maintain the shape and strength of the vaginal canal.  So it is not only important to have regular sexual activity, but also climaxing to exercise those muscles and bring blood flow to the area.  



Sex is a big part of a healthy marriage, and I applaud the husbands out there who are our biggest cheerleaders, and approach with patience and understanding their menopausal wives.  The bedroom romp takes on a whole different meaning when it comes to our aging bodies.  We will be the biggest investors of lubricants, gels, and creative play to maintain a healthy sex life.  The important thing to remember is not to get frustrated, relax, go with the flow, and just have sex.  Schedule a sex date with your spouse and focus on the feelings, sensations, and enjoyment of just being together.  That is what it is all about anyway, giving of ourselves to each other, without inhibition, embarrassment or shame for what we are going through, but a greater sharing experience and acceptance of who we are as women.  Place no expectations on the sexual experience and bask in the moment of play time with your spouse. 

Sex and menopause are just another part of our journey in this life and we do have a choice of how we will handle the changes.  It is important to be pro-active in taking care of our sexual bodies and applying whatever healthy measures that will enable us to feel good, sexy and confident in this area.  Avoiding the subject will not only create a dysfunctional vagina, but also an unhealthy marriage, since sexual closeness is an important part of expressing our need and want for our spouse.  Apply the “use it lose it” philosophy to your changing body and you will be on the right track to a healthier vagina through menopause.

Dandelion Tea Latte and Detox

I have recently discovered dandelion root tea.  I love the nutty flavour and all its benefits.  This tea helps clean the liver, bladder, kidneys and blood.  It has helps with digestion and bloating.  I enjoy this tea just in boiled water but also as a latte.  I add the coconut oil as improves immune systems, skin and overall digestive tract health.

Ingredients
  • 1 cup brewed dandelion root tea
  • 1/2 cup non-dairy milk (I used unsweetened almond milk)
  • 4-6 dates (depending on desired sweetness)
  • 1/2 tablespoon coconut oil (optional)
  • dash cinnamon (optional)
  • 1/4 teaspoon gluten free vanilla (optional)


Directions

  1. Combine all ingredients into a blender and puree until smooth.
  2. Add tea to a pot to warm to desired temperature, stirring frequently.
  3. Serve.

DIY Homemade Foam Hand Soap (Chemical Free)

I am always trying to save money and live with less chemicals.  I have another recipe for hand soap but there is something fun about foam soap, especially for the kids ;)  I used some vitamin E in this recipe to help protect the skin and keep it moist.  I have seen recipes which use almond oil, fractionated coconut oil and/or Aloe Vera juice.

Do ensure you are using pure essential oils without any synthetic additives.  I like orange as it has antibacterial properties and smells great but I have also used melaleuca, peppermint, lemon and/or lavender.
* I can make a bottle of soap for about $0.75 or less.

Ingredients
  • 3 tablespoons liquid castile soap (I use Dr.Bronner's)
  • 10-15 drops essential oils of choice (I like the citrus oils or lavender)
  • 1 tablespoon vegetable glycerin (optional)
  • 1 teaspoon vitamin E oil, aloe vera, fractionated coconut oil or almond oil (optional)
  • filtered water

Directions
  1. Add ingredients into empty hand soap container in order listed.
  2. Add the water to fill bottle to the top leaving room to add the foam dispenser.
  3. Shake lightly.
  4. Use 1-2 pumps as needed.

*Large Batch
  • 6 cups water
  • 1 cup plus 2 tablespoons liquid castile soap
  • 2 tablespoons vitamin E oil, aloe vera, fractionated coconut oil or almond oil (optional)
  • 1/4 cup vegetable glycerin (optional)
  • 60-80 drops essential oils

Cardio Kickboxing

I'm so excited to tell you about the new group exercise class I tried last Monday, "cardio kickboxing".  My husband said he was going to do it with me, but when we got there, it was only women lined up, so he politely declined. (don't blame him!) I'm so glad I tried this class- it was my absolute favorite of all the group classes I tried!  


It was a new experience for sure, I've never worn boxing gloves before or punched a heavy bag.  The bags were all stored in one corner of the class and you had to move it to the room to use.  They are so heavy, you have to squat down with your back against the bag to even move it into position for class- that's a workout in itself.  Most people were two to a bag, but I had my own. 

The class was an hour long, but went by fast.  The instructor played awesome music and was great at explaining what combinations to do.  I watched the two women in front of me (they seemed experienced and knew what to do) so I just followed them.  I have to say it feels GREAT to let go and take all your stress, aggression, and anger out on that bag.  I put a beating on it for sure.  Even though I was wearing gloves, my knuckles were all red at the end.  I was thinking I'll buy my own gloves for the next class and maybe tape my knuckles. 


But, the problem is, I hurt my right shoulder in the process.  I woke up on Tuesday morning and it was kind of sore.  By Wednesday, it hurt to move it.  I still have a range of motion, but I can tell I strained it because it hurts to lift it shoulder height.  Passing anything to my son in the backseat of the car is a killer.  I'm so bummed because I want to go back to kickboxing, but I know I need to lay off it for awhile so it can heal.  

I didn't do any other exercise for the rest of the week, but I think I can run or do the stair master this week.  Or maybe one of the other classes and just not use the weights.  That would be more fun!

Have you tried kickboxing?  What did you think?  Any injuries or pointers to avoid injury?  I'm going to talk to the instructor about my shoulder and see what he says.
